Véronique Pouillards interessefelt er moderne historie med vekt på økonomisk historie og retts- og kulturhistorie. Hun har publisert arbeider om medie- og reklamebransjen historie, næringslivshistorie, opphavrettens historie, mote- og tekstilhistorie. Véronique Pouillard har publisert Paris to New York: The Transatlantic Fashion Industry in the Twentieth Century, Harvard University Press, 2021, og hun er med-redaktør til The Oxford Handbook of Luxury Business, Oxford University Press, 2021.
 
Hun har vært koordinator på prosjektene HERA II The Enterprise of Culture (2013-2016) og UiO Norden Nordic Branding (2016-2019). Véronique Pouillard leder forskningsprosjektet CREATIVE IPR - The History of Intellectual Property Rights in the Creative Industries (ERC Consolidator Grant), som er finansiert av European Research Council (2019-2025).
